Black Walnut Syrup

We took a break this weekend and the boys helped us tap a black walnut tree! Not much sap yet, it may be a bit early in the year still. We’re saving what we get in the freezer and will boil it down on the stove when we have time next month, we’ll post back later with a report on the taste!

 

2024 Sap Update

What a great start to 2024! We’ve already passed the 200,000 gallon mark for sap collected and it’s only February 12th, some years we’re not even fully tapped at this point yet! While the tap holes will surely slow down a little as they age, it will be very difficult to not make a whole crop this year.

 

First Boil 2024

Quick post since we’ve been extremely busy the last several weeks. On Monday we had our first boil and made 550 gallons of great tasting syrup. No early run golden like we were hoping for due to 50+ degree sap and a few hiccups along the way, hopefully the weather cools off  and we can reset for the next batch. We should have all of our taps in tomorrow, then on to our second pass leak checking.
