      Pure water naturally has a slight blue tint to it, but I believe this is due to the immediate deterioration of sap once it leaves the tree. Inside the tree the sap is completely sterile, but as it is exposed to the environment natural bacteria and yeast starts to consume it, often changing the colors. No worries though this sap made excellent syrup!
