Now that it’s officially fall we couldn’t wait any longer to try a recipe we found online for pumpkin cream cheese streusel muffins! We substituted our maple sugar in the batter, and maple pebbles in the streusel topping. They are deliciously moist, and taste like fall!

At Nova Maple Syrup we have 272 acres of land, of which 265 are tapped. In addition to a two acre pine stand and two acres of yard we have a three acre field near Greenville. Last year our neighbor planted hay, we’ve harvested two cuts so far this year. This hay will completely feed our two cows and help feed our neighbor’s herd over the winter. Hobby farming beef and birds is a nice break from the large scale maple farming we do, that is if moving 100+ bales of hay on an 85 degree day can really be called a break!
