We’re finally full swing into the season now, over the last week and a half we’ve tapped 5500 out of 7500 trees and collected ~20,000 gallons of sap! We ran into a few hiccups getting the evaporator and reverse osmosis unit operating, but they’re working great now and we plan on boiling a second time tonight. We should have ~100 gallons worth of syrup in the tanks and another ~100 gallons worth of syrup currently in the evaporator, so it should be an exciting boil! Stay tuned for lots and lots of pictures when we get a free moment.

Our releaser is plugged in and vacuum pump working with variable frequency  controller! Looks like we’ll start tapping Tuesday, it’s hard to believe after a half year of nonstop work we’ll actually be making syrup this week!

Today we managed to move our concentrate tank using a chain hoist and hydraulic jack. Looks like we’ll start tapping next week, everything’s finally starting to come together now!
