Despite making room in our tanks yesterday and expecting a light freeze, we woke up to three of our five collection points overflowing with a fourth just inches from overflowing! It must have run hard all night. We’ve been processing sap nonstop all day and have already made 160 gallons of syrup. We should hit the 300-400+ gallon mark for the day by midnight! Now at least we know 70 degree days in February don’t mean the end of a season. Good thing our sap truck was fixed yesterday, that broken drive shaft would have been a disaster today!
